Temperature times and expectations?Maintaining temperatures is the goal of our Flavor Vault. Resting your food immediately after cooking is a secret that Chefs and backyard barbeque connoisseurs share. Large cuts of meat that include brisket, tri-tip, etc. can be rested for 1-2 hours and still maintain enough heat that they cannot be handled without gloves. For larger cuts, longer rest periods extend the cook cycle and produce a juicier, more evenly cooked meat. Small cuts like steaks, burgers, and pieces of chicken also need to be rested to produce optimum results, but require a shorter rest period of 10-15 minutes. Experiment with your creations and monitor temperatures frequently until you feel comfortable with your results.

What is purpose of the 2"x4" clear label on the front of the Flavor Vault?This clear protective label can be used with a Dry-Erase marker for identifying the contents within the Flavor Vault. This feature is invaluable to catering services or events when multiple Flavor Vault bags are used for keeping larger volumes of food warm. When your event is finished, the Dry-Erase label can be wiped clean so your Flavor Vault can be used for different items at a later date.
